Puerto Rican cuisine’s flavors are defined by one staple ingredient of island cooking – the “sofrito”, a mixture of sautéed ingredients including yellow onions, garlic, Cubanelle pepper, sweet chili pepper, cilantro and culantro (a.k.a “recao” )

1 cup yellow onion
4 garlic cloves
1 cubanelle pepper
4 Ají dulce (sweet pepper)
4 tbsp cilantro
8 recao (coriander) leaves
In a food processor combine, onion, garlic, pepper, sweet chili peppers, and blend for 30 seconds. Add the cilantro and coriander until the mix reaches the consistency of a chunky salsa.
